Things I'm Loving

I thought I would do a round up of things I am loving right now - a bit of a mix with different things, but all things I felt like I need to share!



1.  Kodiak Cakes.  I am seriously obsessed with these pancakes.  The mix has all the good things in it, while still tasting just like regular, old pancakes.  These have been my weekend treat and I am already looking forward to making some again Saturday morning.

2.  The "Killing" books.  I read Killing Lincoln and Killing Kennedy this month and have really enjoyed both of them.  I love history, and these books are a great way to read about history, while still feeling like it's more of a story, rather than a dry, history textbook.  I will be sharing my thoughts further in my January book review, but spoiler alert - I highly recommend them!



3.  Calvin Klein heels.  I have mentioned these shoes before, but I have to say it again - these are by far the most comfortable pumps I have ever worn.  I wore my newest pair last week and was just reminded at how great they are, because for me at least, they require zero "break-in" time.  I have black, navy, and tan, and wear a pair to work pretty much everyday.  I love the classic look, and I can't reiterate just how comfortable they are!



4.  Crest Whitestripes Professional Effects.  I picked these up when I was at my parents' over Christmas, and can really tell a difference.  I like the fact that they are only 30 minutes.  I did try to do them everyday for a bit, but my teeth/gums got a bit sensitive, so I just did every other day.  I felt like my teeth were whiter, and I still have plenty left for when I need a little refresh.  I bought them at Walgreens, and they had a coupon by the display for a discount.  I definitely recommend looking for something like that, or looking for a coupon online, since they aren't the cheapest.  They do really work, though!

5. Oven Fry (I usually get the Kraft brand).  This is one of my favorite quick go-to's for dinner.  It's super delicious, and so easy.  I actually made this last night and paired it with a salad.  Perfect after a long day!

Weekend Recap

Happy Monday!

This post is going to be short and sweet, because honestly, I didn't do a whole lot that is notable this weekend.

Friday ended up being a lot crazier at work than I expected - I even stayed late which is pretty unusual on a Friday.  I had a library book due the next day, so I spent the night finishing it, and watching a little TV.

I was worn out Friday, so I did my cleaning first thing, which was nice to get out of the way.  For lunch I had a new-to-me gyro place, St. Louis Gyros.  It wasn't bad - the fries were pretty amazing, but the gyros definitely don't hold a candle to my favorite, The Gyro Company.

Sunday was all about running errands and meal prepping.  I made Rachel's Roasted Cauliflower Winter Salad for my lunches, and I am super excited to try it out.  I had some bites of the roasted cauliflower and chickpeas while I was prepping and it was so good.  I can imagine mixed together with lettuce, avocado and feta, it is going to be delicious!  The afternoon brought a movie - Patriots Day, which was so hard to watch, but so very good.

Friday Favorites: Treats & Another Phone Call

Yay for Friday!  This week has been another long one - typical of work this time of year, and I am ready for those two precious days off.



My first favorite this week has got to be my southern treats from one of my very favorites, Sarah.  She gave this northern girl a little taste of the south this week, which was super sweet.  I am thankful for her and our friendship, especially our early morning text convos!

A favorite last week was a phone convo with my brother - this week includes one with my grandma AND mom.  I had an appointment in the middle of the day, so I was hoping to use my drive time to catch up with my grandma.  My mom happened to be visiting her that day and while I called on my way back to work to try and avoid interrupting their time together, my mom was still there.  They both got on the phone and we had a quick chat which was super fun.

Walking into my apartment with dinner most of the way done is always a favorite.  I made Beef & Noodles last night and it was so good.  Such comfort meal of mine, especially in the winter.  I knew I had a later meeting at work, so I purposely picked Thursday for a crock pot meal.  So a quick dinner on Thursday and leftovers for the weekend was a total win for me this week.

I picked up these OLLY multivitamins at Target awhile ago and really love them.  I always have them before dinner, and I love how the flavor and the gummy texture almost makes me feel like I am having a treat, even though it's just a vitamin.  Not sure if the deal is still going on, but Target was offering a deal last weekend where if you buy two containers, then you get a $5 gift card.  Gotta love a good deal.

My Barefoot Dreams cardigan is one of my favorite things.  I love wearing it around the house - pretty sure I lived it in over the holidays when at my parents - and almost treat it as a robe in some sense, wearing it over my pjs.  I was super excited when I found out that same brand has actual robes, as I have been wanting one for awhile.  Right now I am stuck between the short robe and the cozy robe - they both aren't cheap, but the short robe is quite a bit more money than the cozy robe.  However, I was thinking the short robe would be better to wear year-round.  I'd love to hear your thoughts, especially if you have either!

Easy and Quick Italian Pork Chops

This is a great go-to recipe when I need a quick and delicious dinner.  If you are a fan of pork chops, peppers and rice, you will enjoy this dinner.   


Italian Pork Chops
4 pork chops
1 teaspoon dried oregano
2 peppers, cut in strips
1/2 onion, chopped
1/2 cup Italian dressing
1/2 cup mozzarella cheese
2 cups rice, uncooked

Cook rice as directed.  The recipe calls for instant rice, but I like to make Basmati rice.  While the rice is cooking, heat a skillet over high heat.  Add chops, cooking for 2 minutes or until bottoms are browned.  Reduce heat to medium, turning chops.  Sprinkle pork chops with oregano, top with peppers, onions and dressing.  Bring to a boil, then simmer on low heat for 12 minutes.  Spoon rice on plates, topping with chops.  Cook vegetable mixture on high heat, 1-2 minutes.  Spoon over chops, then top with cheese.  Enjoy!

Note - depending on the thickness of your pork chops, you may need to simmer a little longer than 12 minutes.  Also, the original recipe calls for a can of Italian-style diced tomatoes, which you would add the same time as the peppers / onions / dressing.  I prefer to leave out the tomatoes, but it does still taste good with them added in.

What's Up Wednesday: January 2017

What I'm eating this week...

I sometimes feel like I get off course from my planning as the week goes in, but so far so good with this one!  I plan to share the Italian Pork Chops recipes tomorrow - the pork chops have peppers and onion with them, takes under 30 minutes to pull together, and is super easy!

What I'm reminiscing about...I don't know if you would consider this reminiscing, because it is more like "where has the time gone," but with my 30th birthday fast approaching (less than two months), I have kind of been stuck on that!

What I'm loving...salads!  I have been having salads for lunch lately - it's the perfect way to get in my veggies.  I make a big batch on Sunday, then portion it out throughout the week.  My go-to is romaine lettuce, red pepper, carrots, cucumbers and green olives.  

What I've been up to...working!  This is a busy month at work, so during the week it's all work, work, work, work, work, and the weekends are more about relaxing, while still being somewhat productive.

What I'm dreading...not much at this point in time!

What I'm working on...getting organized.  I read The Life-Changing Art of Tidying Up (read my thoughts here) and just checked out the second book from the library last weekend.  I want to read up on tips and tricks before I start actually going through things, so that I can hopefully complete my reorg as efficiently as possible!  I also read this blog post last week about purging clothes, which I really enjoyed, too.  Seems like a great system to put in place after I do a big clean out to keep things in check.  

What I'm excited about...travel planning.  I really want to make make the most of my work travel this year, and get in some extra fun travel.  In order to do that, I am thinking about it early on, trying to plan and it's really making me excited!  

What I'm watching...nothing too new and exciting.  Shooter's first season ended, but I am happy to hear it will be back in the summer.  Pure Genius has been a favorite lately, but I think their season is ending soon, too.  Hopefully it will be back, though!  Other than that, Quantico, Madame Secretary, Elementary, Sister Wives, Teen Mom 2...

What I'm listening to...not much.  Now that the holidays have passed, I don't really listen to much music at work, and with my short commute, I don't really hear much to and from work.  

What I'm wearing...UGG slippers.  Pretty much any time I am at home, these babies are on my feet!

What I'm doing this weekend...no plans for this weekend - I suppose I should start thinking about that!

What I'm looking forward to next month...hopefully things being a bit less busy at work, the Spirit of Provident Gala, and Valentine's Day!


Bonus Question: Who is your favorite Bachelor...I honestly haven't really watched The Bachelor, other than some of Ben's season.  I guess I would have to say him, although I enjoy Sean Lowe, but I didn't really hear of him when he was actually on the show, just after.

Show & Tell Tuesday: Steal vs. Splurge

Today is the first Show & Tell Tuesday of 2017.  I like this topic, because I find it interesting to see how people save, and what they consider to be worthy of a splurge.  



I started to think about what I do personally, and honestly I feel like I am a splurger on most things!  When it comes to clothes, shoes and bags, I tend to splurge.  I have noticed during my closet clean outs, a lot of the cheaper quality items (which usually means they weren't a lot of money), don't make it very long, whereas the items I spend a little more on, last way longer.  I just recently bought a pair of Paige jeans that were on sale at Nordstrom, and I really like them.  I am hoping that paying the extra money, even on sale, will be worth it in the long run.  I purchased my GiGi New York bag on sale almost a year ago, and having been loving it ever since.  I use the same bag all the time, so spending the extra money on it makes sense for me.  I will say though, that my favorite v-neck tops are from Target, and they do wash and wear well.  I pretty much am in one of these whenever I am at home, relaxing, or for casual days out and about.  I also always go for the sunglasses from Nordstrom's juniors section.  I am terrible with sunglasses, somehow they always get banged up, so I opt for the cheaper ones.  That way I don't get upset if they need to be replaced.  I would love a pair of Ray-Bans, though.  I think if I had a really nice pair I would take better care of them, but for now, it's all about the cheapo sunglasses for me!  I obviously tend to splurge on clothes, but as I mentioned, some of the bigger items were bought on sale, which always makes them better!

Kitchen gadgets are also some things that usually turn out to be worth spending a bit extra on.  I love being in the kitchen, so everything usually gets well used and I know that it is money well spent.  For example, when I asked for a spiralizer for Christmas, they have small hand held ones that are inexpensive, but I heard from others that they weren't the easiest to use and I would be better off going a bit nicer, which is why I went with this OXO one for my list.

I love to decorate, but I would say that I like more steals when it comes to interior design.  I love shopping sales, especially after the holidays, and tend to make those purchases when I can get a good deal.  Right now, a lot of my furniture is Ikea, Target, or hand me downs, but I love the way it all comes together.  The items I have from Ikea are more traditional and classic, so the look of them still fits within my style.  When I first purchased them in college, I just updated the hardware with some sturdier knobs which I really think made a big difference.  While I know that some items will eventually be updated, right now I would rather spend my money elsewhere.

My everyday steals definitely come in the way of toiletries, some make up, and groceries.  I usually check out the Up & Up brand at Target for things like body wash and lotion.  I don't spend a lot on shampoo and other hair products - just drugstore brands.  Some of the items I always spend a bit more on include face masks, eye cream, foundation and mascara, but almost everything else I wear is e.l.f. or another drugstore brand.  For groceries, I tend to go generic on staples, too.  While I like buying organic if possible, my grocery store has an off brand of that, so as long as it is a comparable product, I often go with that kind.  Garbage bags, baggies, paper towels and napkins are always an off brand, too!

So you can see - I tend to splurge more, or at least spend a bit more on things, but with wear and use, I usually feel that I get my money's worth out of those items.  I feel I could get some more steals though, so I am definitely looking forward to reading posts on this topic!

Weekend Recap: Books & Church

Hey all!  Hope you had a great weekend.  Mine was good, but as always, went by way too fast!

Friday was a good day.  The TVs throughout the building had the inauguration on, and I thoroughly enjoyed checking out the outfits.  Melania's blue suit dress was gorgeous, and I absolutely loved Ivanka's ballgown.  No matter what side you are on, I think you can always appreciate the fashion.  Michelle Obama had some really great moments, and I can imagine between Melania and Ivanka Trump we will see more great looks.  I cleaned Friday evening, then finished up my latest favorite book, Two by Two by Nicholas Sparks.  I loved it.  

After sleeping in later than normal the past few weekends, I decided to set my alarm this weekend.  Later then during the week, but early enough to feel like I was getting a good start on the morning.  I got in my workout, enjoyed a show (anyone else a Shooter fan?) and then headed out to run errands.  It was SO NICE out this weekend.  I was plenty warm in just a long sleeve shirt, with no jacket.  I wore one of my Christmas presents, these UGG slip ons, while out and I can't tell you how comfortable they are.  Usually I am really good at getting in and out at Target, but this past Saturday I went in with four items on my list and left with a ton more than that.  Whoops!  I logged in more reading time that afternoon, before heading out to dinner to Outback.  It was nice to enjoy a dinner out, and honestly, I think Outback is just as good as some of those fancy steakhouses.  I can't hang like I used to, and that small glass of wine I had with dinner had me in bed pretty early after I got home!

I finished up my second round of the 21 Day Fix on Sunday.  I would say that my second experience was pretty similar to my first one, which I shared here.  The meal plan part did get a bit easier, and I think I have gotten into a better routine and habit with my prepping for the week.  I got ready and headed out to try a church.  I get pretty anxious about trying new things, so to say I was nervous would be an understatement.  It was definitely more contemporary than I am used to - there was a band and we didn't even say the Lord's Prayer! - but I enjoyed the message, and met the sweetest old man on my way out.  It must have been pretty obvious I was new, and I appreciated him taking a few minutes to go out of his way to chat and welcome me.  I plan on going again next weekend, before trying out a few others.  Even if this is not the one for me, I am just really proud of myself for getting out of my comfort zone and going.  The rest of the day was spent reading - pretty much the theme to the whole weekend - and meal prepping.  Five Guys rounded out the night, which is always such a treat.

Now it's back to the grind and another busy week at work.  Happy Monday!

Friday Favorites: 1.20.17

TGIF!  I know I am not the only one saying that.  Sometimes the short weeks seem the longest.


1.  Tyson Grilled & Ready Fully Cooked Frozen Grilled Chicken Breast Strips.  That's a mouthful, but if you aren't familiar, it's just chicken that has already been cooked, sliced and then frozen.  I knew I was going to be spending a lot of time prepping dinners for the week, and grilling chicken for salads just did not seem like something I wanted to do.  I remembered way back when, my mom recommended using these, so when I headed to the store, I grabbed some and they have been making my lunches so easy this whole week.  I just portion them frozen into a little container, they kind of defrost while in the fridge at work, and then pop them in the microwave for 45 seconds to a minute.  They are flavorful, but not really flavored if that makes sense, so it can go with anything.  Like I said, they have made my lunches so easy this week.  A great go-to when you want something healthy, but don't necessarily want to put the time into it.

2.  Mini Quiches.  My breakfast for the past couple weeks has been two hard boiled eggs.  It fits well within the 21 Day Fix meal plan, and is easy.  Not to mention, I really enjoy them.  However, I was starting to get tired of them, and needed to switch things up.  I also had some spinach that was probably going to go bad soon in the fridge, so I thought back to the mini quiches I shared awhile ago.  I changed the recipe a bit to suit the meal plan and what I had on hand.  I just added the spinach to my muffin tin, then topped with 10 whisked eggs and pepper.  I pop two in the microwave for breakfast in the morning and enjoy.  It's something that is different from hard boiled eggs, and helps get in my greens, too.  Gotta love when old recipes pull through like that!

3.  New bath towels.  A few weeks or so ago, I commented that I thought I needed new towels - they just weren't as soft as they used to be.  A week later, I had a package on my doorstep!  I have been using my new towels this week and holy cow are they soft and fluffy and so nice.  Aren't those unexpected and so very thoughtful gifts the best?  Paying attention to those little, mundane things, definitely is a way to my heart.

4. Phone calls with my brother.  Talking on the phone is not my thing.  I would prefer to text, unless it is something I need to know right this minute.  However, I do have a handful of people that I really enjoy talking to on the phone - my brother being one of them.  He called earlier this week when he was on his way home and it was nice to just catch up on his life.  I feel like when we get together, we don't always get the time to just talk - it's more visiting with family, talking about high level stuff, that type of thing.  So having the chance to hear more about what's actually going on was really nice.  

5.  Essie "Berry Naughty".  This is an oldie, but goodie.  A super pretty deep red / rust, it adds a great pop of color to my toes.

Confessions: January 2017

I confess...I am tired.  As I am writing this (yesterday), I keep thinking to myself, how has it only been two days at work?  The past few days have been doozies at work and I am ready for the weekend.

I confess...I found another Starbucks drink to fall in love with - Cinnamon Dolce Latte.  I needed a pick me up yesterday and the coffee shop at work had been advertising this new drink.  The picture totally worked and I had to try one.  Verdict - delicious.  I am not a coffee connoisseur, so I may be way off, but I find it kind of similar to a pumpkin spice latte, just a bit lighter.

I confess...sometimes I feel so behind on the times, technology-wise.  Two instances this week.  A friend had to explain to me what Facebook live videos were - granted the name pretty much describes it and I am guessing they are like the same thing as Instagram Stories, but still I was like what??  The Young Professionals group I am was talking about using Venmo to collect money for a silent auction item we are putting together.  Obviously, I could pull from context that it's a money exchange app, but again I was like ummmm?

I confess...I check out way too many books from the library and almost always end up renewing them, sometimes multiple times.  I just can't help it though - I want to read them all!  Thank goodness for online renewals!

I confess...my skin is so dry.  I drink lots of water, put lotion on everyday and have the humidifier going the whole time I am home, but it still is so dry.  Any suggestions?

I confess...I am still thinking about the movie, Hidden Figures.  It really was so good.  Just goes to show you that women can do anything, even in the face of adversity.  I feel like there are just so many good movies out that I want to see lately - La La Land, Patriots Day, Live By Night, Fences, Jackie...the list goes on!  

I confess...Monday I meal prepped all dinners for the week, which included enchiladas and chili.  I had bought everything before the "ice storm" so I was all set, or so I thought.  As I started to assemble the enchiladas, I realized I purchased burrito size tortillas, not taco size!  I ended up cutting down every single one so that they would fit in the pan.  What was supposed to be a quick and easy assembly turned into quite the ordeal!  I just have to laugh at myself, because I thought I was so prepared, only to find out I was not at all!

*I had to come back and add this last one because it still makes me shake my head/laugh at myself.

My View on "The Life-Changing Magic of Tidying Up"

One of my January goals was to read The Life-Changing Magic of Tidying Up.  This plays into one of my resolutions for the year - organize everything!  MLK Day proved to be a great day to knock this book off my list, and I wanted to share my thoughts on how I plan to adapt what I learned into my own organizing system.



To me, the main overlying message was to only keep things that bring yourself joy.  It makes sense.  You are happier when you are surrounded by people you love, so why wouldn't you be happier surrounded by things you love, too?!  Nothing too ground shattering there, but sometimes you need to read / see things to help them sink in.

Below are a few of my biggest takeaways:

1.  Organize by category, not by room.  I really like this idea.  You get everything of one thing, for example books, and look through them all at once.  If you are like me, you have books a few differently places in your home, and it's easy to look through them just where they are, as opposed to piling them all together to sort.

2.  Touch everything.  This is a big one for me.  I often think by just looking at things I can decide what to do with them well enough, but physically touching everything is key. 

3.  Start with clothes, end with keepsakes.  While I love clothes, it's way easier for me to get rid of them than it is for me to toss an old birthday card.  By starting with something a bit easier, then you will just start to build on that momentum so that when you get to the harder stuff, it will be easier.

A few things I am going to take into consideration:

1.  Folding instead of hanging.  I actually utilize her folding method for some of my old t shirts, but that is really it.  The idea is that you can fold your items, then store them vertical in a file like fashion, so that you can see everything, as opposed to folding and stacking, which lessens your storage space, and allows you to forget about items on the bottom.

2.  Fold and roll socks, as opposed to "balling" them.  I am totally the person that makes little balls with my socks.  I can't explain it very well, but I usually fold them, then kind of put the top inside out so it holds them in a little ball.  The book suggests folding, rolling, and then storing them so that the "swirl" is up.  I actually tried this with my athletic socks and I do think it takes up less space!

Now for the hokey bits...

1.  Talking to your things.  For example, coming home and greeting your place, and saying thank you for offering shelter.  I guess you could relate this almost to a prayer, where you thank god for your home, food, and such, but actually addressing your home and other inanimate objects seems a bit strange to me.  I was warned about this, but still kind of thought "what in the world" when I was reading these parts.

2.  Resting your items.  Now I understand putting things back in their place, like putting your shoes away after you wear them, but letting things "rest" is a bit out there for me.  The idea of unpacking my purse every single night to let the bag rest does not work for me.  I use the same purse all the time, and I know if I emptied it out every night, I would surely forget to fully repack it the next morning.

Overall, I did enjoy reading this book.  I pretty much love reading anything about organizing, so it definitely fit the bill.  While some of the ideas were a bit out there for me, I did have some takeaways, so I would say it is worth the read.  If anything, it will get you excited about reorganizing, which in of itself is a good thing.

Weekend Recap: MLK Weekend

Hey all!  Hope you enjoyed your extra weekend day as much as I did.  Wouldn't it be lovely is all weekends were 3 days?

The forecast for St. Louis was supposed to be bad all weekend.  Fortunately, it really just hit us Friday and that was it!  I ended up working from home, which was a good idea, because it got icy out there.  My balcony was just a sheet of ice, so I could only imagine the roads.  Luckily the various news stations really prepped us for the potential ice.  I was a bit sad though - one of my favorite things about a big storm / bad weather is the storm coverage on the news.  I seriously can watch it all day.  While we did get ice, it wasn't near as bad as I think they were anticipating, so the extreme storm coverage did not happen.  I guess that is a good thing, though!  After working, I did my work out and relaxed in front of the tv.

The temps rose enough on Saturday to melt the ice, and while we did have rain on and off the rest of the weekend, the epic ice storm did not come to fruition.  I still hunkered down inside and made a big dent in my DVR.  Last week was one of those busy ones, both at work and outside of work, so it was nice to just relax.  

Sunday was pretty uneventful, too, with some organizing and reading.  I did finally get out of the house to see a movie - Hidden Figures.  I can't say enough good things about this movie.  It's a must-see!  I think everyone in the theater felt the same, because we had some clapping at the end.  Just very powerful.

I enjoyed the extra day off with sleeping in a bit.  I did that more than normal this weekend, which was both good and bad.  I think I needed the sleep, but I also felt like I got a late start to the days which put me off a bit.  I headed out for lunch, and then spent the rest of the day meal prepping and doing laundry...all that fun stuff.  Overall it was a really low-key weekend, but sometimes that is just what is needed.

Friday Favorites 11.13.17: Lunch at the Federal Reserve

Yay for Friday!  Did anyone else think this week seemed extra long?  In all actuality it was, because for a lot of us, it was the first full week back at work since the holidays!  Things are gearing up for me at work, so I am happy to have the long weekend to look forward to.

This Wednesday, I went to a lunch event at the Federal Reserve Bank of St. Louis.  It was so neat!  I absolutely love old buildings, and this one is gorgeous.  The lobby was amazing - marble everywhere, and the most gorgeous ceilings and chandeliers.  The lunch was basically a networking event, with a presentation from one of the Fed's economists.  It was nice meeting other people in my profession, as well as a few others outside of what I do.  The presentation was very interesting - an economists look at the global and U.S. economy, with a bit of local color sprinkled within.  It didn't hurt that the food was delicious, too.  Definitely the highlight of my week!




My Lilly items came in the mail this week and everything fits!  I was a bit nervous, just because there is a no return policy with the sale, but they are perfect.  Now we just need spring to come so I can start wearing them!

I made Andrea's Pulled Pork yesterday, and it really never disappoints.  If you are a pulled pork fan, you need to make this recipe.  It's ridiculously easy, and is the perfect thing to come home to after a long day at work.  One of my favorite ways to serve it is over rice with some shredded monterey jack cheese on top...yum!  

With it being the first of the year, so many people are posting about their goals and resolutions.  I have come to realize that these are some of my favorite types of posts.  I find it really interesting to see what everyone is working on for the year.  It helps motivate me to stick with my resolutions, as well as provides some food for thought on new things I can work on.

An ice storm is heading our way this morning / afternoon and will be sticking around through Saturday.  I decided to prepare myself for the possibility of being stuck inside for 2 days and headed to the grocery store earlier this week to stock up on my groceries, and made trip to the library to get some good reading material.  I am ready to go if it really does hit us like they are saying, not to mention, my weekend meal planning and grocery shopping is already done and out of the way.  More time to read and relax.
